Coloring up is when you give your chips to the dealer to exchange them for higher denomination chips (different color, ergo color up). This is usually only done when you’re about to leave a table, because you don’t want to walk around with stacks of red ($5) chips when you can carry a few green ($25) chips, and the dealer wants to keep the red chips so they can keep dealing without running out.
